Ingredients
  

For the Slaw
  • 2 ripe mangoes Use juicy, ripe mangoes for the best sweetness and flavor.
  • 3 cups cabbage Both green and red varieties can be mixed.
  • 1 large carrot Shredded just before use for freshness.
  • 0.5 medium red bell pepper Thinly sliced.
  • 1 small red onion Soak in cold water to mellow flavor if needed.
  • 0.25 cup cilantro Fresh herbal notes; substitute with parsley if preferred.
For the Dressing
  • 2 tablespoons maple syrup Plant-based sweetener.
  • 2 tablespoons sesame oil Adds nutty flavor; can substitute with olive or avocado oil.
  • 2 medium limes Juiced; freshly squeezed preferred.
  • salt To taste.
  • black pepper To taste.

Method
 

Preparation
  1. In a large mixing bowl, dice 2 ripe mangoes into bite-sized pieces, shred 3 cups of cabbage, and grate 1 large carrot. Thinly slice half a red bell pepper and a small red onion, then toss everything gently to combine.
  2. Finely chop a quarter cup of fresh cilantro and sprinkle over the vegetable mixture, then toss again gently to incorporate.
  3. In a separate small bowl, whisk together the juice of 2 limes, 2 tablespoons of maple syrup, and 2 tablespoons of sesame oil, adding a pinch of salt and pepper to taste.
  4. Pour the lime dressing over the mango and vegetable mixture and toss gently until well coated.
  5. Allow to sit for 5-10 minutes at room temperature to let flavors meld.
  6. Transfer to a serving bowl and enjoy as a refreshing side dish.
