- In a large mixing bowl, dice 2 ripe mangoes into bite-sized pieces, shred 3 cups of cabbage, and grate 1 large carrot. Thinly slice half a red bell pepper and a small red onion, then toss everything gently to combine.
- Finely chop a quarter cup of fresh cilantro and sprinkle over the vegetable mixture, then toss again gently to incorporate.
- In a separate small bowl, whisk together the juice of 2 limes, 2 tablespoons of maple syrup, and 2 tablespoons of sesame oil, adding a pinch of salt and pepper to taste.
- Pour the lime dressing over the mango and vegetable mixture and toss gently until well coated.
- Allow to sit for 5-10 minutes at room temperature to let flavors meld.
- Transfer to a serving bowl and enjoy as a refreshing side dish.
