Ingredients
  

Dressing
  • 1 cup Greek Yogurt Use full-fat for richer flavor!
  • 1 medium Avocado Mash for a smooth texture.
  • 2 tablespoons Lime Juice Fresh-squeezed is best!
  • 1/2 cup Cilantro Double it for extra flavor!
  • 1 teaspoon Garlic Powder
  • to taste Salt
  • to taste Pepper
Salad
  • 8 ounces Pasta Use short pasta like rotini, fusilli, or penne.
  • 1 can Chickpeas Drained and rinsed.
  • 1 cup Corn Drained canned corn works perfectly.
  • 1 medium Cucumber Chopped into bite-sized pieces.
  • 1/2 medium Red Onion Finely diced.
  • 1 cup Feta Cheese Substitute with cojita for a different flair.
  • Cilantro Leaves Optional garnish.
  • Lime Wedges For serving.

Equipment

  • blender or food processor

  • large mixing bowl

Method
 

Dressing Preparation
  1. In a blender or food processor, combine Greek yogurt, mashed avocado, fresh lime juice, cilantro, garlic powder, salt, and pepper. Blend until smooth and creamy.
  2. Transfer the dressing to a bowl and set aside to meld flavors.
Pasta Cooking
  1. Bring salted water to a boil. Cook your choice of short pasta until al dente (8-10 minutes), then drain and rinse under cold water.
Combining Ingredients
  1. In a large mixing bowl, add the cooled pasta, chickpeas, corn, cucumber, and red onion. Gently toss until evenly distributed.
Dressing the Salad
  1. Drizzle the dressing over the salad mixture and toss gently until well coated.
Adding Feta
  1. Crumble the feta cheese over the top and fold into the salad.
Serving
  1. Garnish with cilantro leaves and serve lime wedges on the side.
