  1. Preheat your oven to 430°F (220°C). In a mixing bowl, toss diced sweet potatoes and minced garlic with olive oil, salt, and black pepper until evenly coated. Spread on a baking sheet and roast for 20-25 minutes.
  2. In a large pot, bring salted water to a boil and cook the short pasta until al dente, about 8-10 minutes. Reserve 2/3 cup of pasta water before draining.

  4. In the same skillet, add roasted sweet potatoes, mashing half with a fork or masher to form a base. Stir gently to combine.
