For the Filling
  • 2 cups Vegan Chick’n Pieces Try Gardein brand.
  • 1 cup Carrots Fresh or frozen.
  • 1 cup Celery Chopped.
  • 1 medium Onion Diced.
  • 2 cloves Minced Garlic Use fresh for best results.
  • 2 tablespoons Vegan Butter For sautéing.
  • 1 cup All-Purpose Flour Can swap for gluten-free flour.
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme Leaves
  • 2 cups Vegan Vegetable Broth
  • 1 cup Frozen Peas
  • 1/2 cup Vegan Heavy Cream Substitute with cashew cream if needed.
For the Topping
  • 2 cups Vegan Stuffing Use homemade or store-bought.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare your workspace and gather necessary tools.
  2. Roll out your vegan pie crust and place it into the pie dish.
  3. Melt vegan butter in a skillet, add diced onions, carrots, and celery. Sauté until softened.
  4. Stir in minced garlic and cook for another minute.
  5. Sprinkle in flour, stir continuously, and gradually add vegetable broth until thickened.
  6. Fold in chick’n pieces, peas, thyme, salt, and pepper.
  7. Pour filling into the pie crust and top with vegan stuffing.
  8. Bake in the preheated oven for 30-35 minutes until golden brown.
  9. Let it cool for 10 minutes before serving.
