In a large mixing bowl, combine the shredded coconut, almond flour, maple syrup, melted coconut oil, vanilla extract, and salt. Mix well until all ingredients are thoroughly combined.
Once the mixture is well combined, use your hands to form small balls, about 1 inch in diameter. Place the balls on a parchment-lined baking sheet.
Refrigerate the coconut balls for at least 30 minutes to firm up.
While the coconut balls are chilling, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
Remove the chilled coconut balls from the refrigerator. Dip each ball into the melted chocolate, allowing any excess chocolate to drip off. Return the chocolate-covered balls to the parchment-lined baking sheet.
Once all the balls are coated, place them back in the refrigerator for another 15-20 minutes to set the chocolate.
