- Preheat your oven to 200°C (400°F) and line a baking sheet with foil.
- In a medium skillet, heat olive oil. Add onion and garlic, cook until softened.
- In a large mixing bowl, combine ground chicken, onion, garlic, breadcrumbs, milk, Parmesan, egg, parsley, Italian seasoning, and salt. Mix gently.
- On the baking sheet, shape two-thirds of the mixture into a loaf. Create a well in the center, fill with mozzarella, and cover with remaining mixture.
- Spread marinara sauce over the top of the meatloaf.
- Bake for 45 minutes until cooked through.
- Mix panko, Parmesan, melted butter, and parsley in a bowl. Prepare topping.
- After 45 minutes, sprinkle shredded mozzarella and panko mixture on top. Bake for an additional 15-20 minutes.
- Allow meatloaf to rest for 10 minutes before slicing.
