For the Meatloaf
  • 2 tablespoons Olive Oil or avocado oil
  • 1 Onion finely diced
  • 2 cloves Garlic minced
  • 1 pound Ground Chicken or ground turkey
  • 1 cup Seasoned Breadcrumbs
  • 1/2 cup Milk or chicken broth
  • 1/2 cup Parmesan Cheese grated
  • 1 Egg
  • 1/4 cup Fresh Parsley chopped
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt
  • 8 ounces Mozzarella Cheese Strings
For the Topping
  • 1 cup Marinara Sauce
  • 1/2 cup Panko Breadcrumbs
  • 2 tablespoons Butter melted
  • 1/2 cup Shredded Mozzarella Cheese

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with foil.
  2. In a medium skillet, heat olive oil. Add onion and garlic, cook until softened.
  3. In a large mixing bowl, combine ground chicken, onion, garlic, breadcrumbs, milk, Parmesan, egg, parsley, Italian seasoning, and salt. Mix gently.
  4. On the baking sheet, shape two-thirds of the mixture into a loaf. Create a well in the center, fill with mozzarella, and cover with remaining mixture.
  5. Spread marinara sauce over the top of the meatloaf.
  6. Bake for 45 minutes until cooked through.
  7. Mix panko, Parmesan, melted butter, and parsley in a bowl. Prepare topping.
  8. After 45 minutes, sprinkle shredded mozzarella and panko mixture on top. Bake for an additional 15-20 minutes.
  9. Allow meatloaf to rest for 10 minutes before slicing.
