Step-by-Step Instructions
  1. In a large bowl, whisk together the yogurt, olive oil, lemon juice, minced garlic, dill, and salt until smooth and creamy. Set aside.
  2. In a medium saucepan, bring water and vinegar to a gentle simmer. Crack eggs into small bowls and gently slide them into the water. Poach for about 3 minutes.
  3. In a small pan, melt the butter over medium heat. Stir in Aleppo pepper and cook until fragrant, about 1 minute.
  4. Spread herbed yogurt in shallow bowls, place poached eggs on top, and drizzle with spiced butter sauce. Garnish with additional dill or mint, and season to taste.
