For the Chicken Marinade
  • 1 pound Chicken Breasts or substitute with grilled shrimp or tofu
  • 1/4 cup Soy Sauce low-sodium preferred
  • 2 tablespoons Lime Juice freshly squeezed
  • 2 tablespoons Sesame Oil olive oil works as a substitute
  • 2 cloves Minced Garlic fresh

For the Peanut Sauce
  • 1/3 cup Peanut Butter or consider almond or sunflower seed butter for allergies
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Lime Juice
  • 1 tablespoon Honey or maple syrup as a substitute
  • 1 teaspoon Sriracha adjust according to spice tolerance

For the Wraps
  • 4 pieces Tortillas whole wheat or gluten-free options
  • 1 cup Shredded Carrots
  • 1 cup Julienne Cucumber
  • 1 cup Shredded Red Cabbage
  • 1/2 cup Chopped Cilantro

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine soy sauce, lime juice, sesame oil, minced garlic, and a pinch of salt and pepper. Add the chicken breasts and let marinate for at least 20 minutes.
  2. In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, and sriracha. Gradually add water until desired sauce consistency is achieved. Set aside.
  3. Preheat a grill or skillet over medium heat. Cook the marinated chicken breasts for approximately 6 to 7 minutes on each side until golden brown. Let rest for 5 minutes before slicing.
  4. Lay a tortilla flat and layer with chicken strips, shredded carrots, cucumber, and cabbage. Sprinkle cilantro and drizzle with peanut sauce.
  5. Roll the tortilla tightly around the filling and slice in half. Serve immediately with lime wedges and extra peanut sauce on the side.
