  • 1 cup Baby Dill Pickles Diced
  • 1 cup Colby Jack Cheese Cubed
  • 1/2 cup White Onion Finely chopped
  • 2 tbsp Fresh Dill Or 1 tbsp dried

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water and cook the rotini pasta until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Toss cooled pasta with dill pickle juice and let soak for about 10 minutes.
  3. Prepare mix-ins: dice pickles, cube cheese, and chop onion.
  4. Combine soaked pasta with diced pickles, cheese, and onion.
  5. In a separate bowl, whisk together mayonnaise, sour cream, dill pickle juice, dill, salt, and pepper until smooth.
  6. Pour dressing over pasta mix and gently toss to coat.
  7. Cover and refrigerate for at least 1-2 hours before serving.
