  • 2 cups Enchilada Sauce Consider green for a twist
  • 4 pieces Tortillas Corn or flour
  • 1 cup Cheese Cheddar or Monterey Jack

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Peel and thinly slice 2 to 3 medium sweet potatoes. Rinse and drain one can of black beans.
  2. Layer in the baking dish: Place 4 tortillas at the bottom, add sweet potatoes, black beans, enchilada sauce, and cheese. Repeat this process.
  3. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 to 15 minutes until bubbling.
  4. Cool for about 10 minutes before serving. Garnish with fresh cilantro or avocado slices.
