- In a large mixing bowl, combine the coleslaw mix, thinly sliced Granny Smith apples, diced celery, and finely chopped green onions. Gently toss the ingredients.
- In a saucepan, combine the apple cider vinegar, granulated white sugar, olive oil, Dijon mustard, and red pepper flakes. Heat over medium for 3-4 minutes until sugar dissolves.
- Remove from heat and whisk in the mayonnaise until smooth. Pour the dressing over the coleslaw mixture and toss to coat.
- Cover the bowl and refrigerate for at least 1 hour to meld flavors.
- After chilling, give the coleslaw a final toss and serve.
