Ingredients
  

  • 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/4 teaspoon red pepper flakes optional
  • Chopped green onions and sesame seeds for garnish

Method
 

  1. In a large bowl, combine flour, salt, and black pepper. In another bowl, place the beaten eggs. In a third bowl, add the panko breadcrumbs.
  2. Dredge each piece of chicken in the flour mixture, shaking off the excess, then dip it into the beaten eggs, and finally coat it with panko breadcrumbs. Place the coated chicken on a baking sheet.
  3. Preheat your oven to 400°F (200°C).
  4. In a large skillet, heat vegetable oil over medium heat. Fry the chicken pieces in batches until golden brown and cooked through, about 4-5 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
  5. In a small saucepan, combine honey, soy sauce, rice vinegar, garlic powder, ginger powder, and red pepper flakes. Cook over medium heat until the mixture is heated through and slightly thickened, about 5 minutes.
  6. In a large bowl, toss the fried chicken with the honey sauce until well coated.
  7. Serve immediately, garnished with chopped green onions and sesame seeds.

Notes

  • For a healthier option, bake the chicken instead of frying. Place the coated chicken on a greased baking sheet and bake for 20-25 minutes, flipping halfway through.
