Ingredients
  

  • 2 cups fresh corn kernels about 4 ears of corn, cooked and cooled
  • 1 large cucumber diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro chopped (optional)
  • 1/4 cup crumbled feta cheese optional

Method
 

  1. In a large mixing bowl, combine the corn, diced cucumber, cherry tomatoes, and red onion.
  2. In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
  3. Pour the dressing over the corn and vegetable mixture, and gently toss to combine until everything is well coated.
  4. If using, fold in the chopped cilantro and crumbled feta cheese for added flavor.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled as a refreshing side dish.
