Preparation Steps
- Preheat your oven to 425°F (220°C). Gather kitchen tools.
- Lightly oil the bottom of your 9x13 baking dish.
- In a large mixing bowl, combine soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper. Stir until smooth.
- Coat the chicken thighs with the apricot sauce. Set aside remaining sauce.
- Place chicken thighs skin-side down in the baking dish. Bake for 20 minutes.
- Carefully flip the chicken thighs and spoon remaining apricot sauce over the top. Bake for an additional 25-30 minutes.
- Check that the chicken reaches an internal temperature of at least 165°F (74°C).
- Let chicken rest for a few minutes before serving.
