Ingredients
  

For the Chicken
  • 4 pieces bone-in, skin-on chicken thighs Boneless thighs can be used but adjust cooking time by about 15 minutes.
For the Sauce
  • 1/2 cup soy sauce (low sodium) Use regular soy sauce cautiously.
  • 2 tablespoons Dijon mustard No substitutions necessary.
  • 1/2 cup apricot preserves Can substitute with peach or orange marmalade.
  • 1 tablespoon dehydrated onion Fresh onion may be used, but should be cooked down.
  • 1 teaspoon kosher salt Adjust based on saltiness of soy sauce.
  • 1 teaspoon granulated garlic Fresh garlic can be substituted in lesser quantity.
  • 1/2 teaspoon crushed red pepper Omit if a milder flavor is preferred.

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C). Gather kitchen tools.
  2. Lightly oil the bottom of your 9x13 baking dish.
  3. In a large mixing bowl, combine soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper. Stir until smooth.
  4. Coat the chicken thighs with the apricot sauce. Set aside remaining sauce.
  5. Place chicken thighs skin-side down in the baking dish. Bake for 20 minutes.
  6. Carefully flip the chicken thighs and spoon remaining apricot sauce over the top. Bake for an additional 25-30 minutes.
  7. Check that the chicken reaches an internal temperature of at least 165°F (74°C).
  8. Let chicken rest for a few minutes before serving.

Notes
