Filling
  • 1 package Puff Pastry Sheets thawed if frozen
  • 1 cup Frozen Chopped Spinach thawed and well-drained
  • 1 cup Feta Cheese crumbled
  • 1/2 cup Ricotta or Cream Cheese optional
  • 1 large Egg acts as binder and glaze
  • 2 cloves Garlic minced
  • 1/2 cup Onion finely chopped, optional
  • 1 tablespoon Fresh Dill or Parsley chopped, or substitute with favorite herbs
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
Topping
  • 1 large Egg beaten with a splash of water or milk
  • 2 tablespoons Sesame or Poppy Seeds optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Thaw and thoroughly drain the frozen chopped spinach, squeezing out excess moisture.
  3. In a mixing bowl, combine the drained spinach with crumbled feta, ricotta or cream cheese, minced garlic, chopped herbs, a beaten egg, salt, and pepper. Stir until evenly mixed.
  4. Roll out puff pastry sheets on a floured surface to an even thickness and spread the spinach and feta mixture, leaving an edge of half an inch.
  5. Roll the pastry tightly into a log shape and slice into rounds about 1 inch thick.
  6. Place rolls cut-side up on the prepared baking sheet and brush with egg wash; sprinkle with sesame or poppy seeds if desired.
  7. Bake for 18-22 minutes until golden brown and puffy, then remove and allow to cool slightly before serving.
