  • 2 shallots, finely chopped
  • 1-2 chilies, finely chopped adjust for spice preference
  • 1/2 cup fresh coriander, chopped
For the Dressing
  • 3 tablespoons fish sauce can substitute with soy sauce
  • 1 tablespoon lime juice, freshly squeezed
  • 1 tablespoon chili paste adjust for spice preference
  • 1/2 teaspoon chili flakes for extra heat
  • 1 clove garlic, minced
  • 1 stalk lemongrass, chopped finely
Optional Add-ins
  • 1/4 cup roasted peanuts for extra crunch
  • 2 kaffir lime leaves, torn
  • 1/2 teaspoon MSG optional

Method
 

Step-by-Step Instructions
  1. Poach the shrimp in a medium pot of gently simmering water for 1-2 minutes until pink and opaque. Remove and cool slightly.
  2. In a large mixing bowl, whisk together fish sauce, lime juice, chili paste, chili flakes, and optional MSG until well combined.
  3. Add the poached shrimp to the dressing and toss gently. Incorporate garlic, chilies, shallots, lemongrass, kaffir lime leaves, and coriander.
  4. Taste the salad and adjust seasoning with more lime juice or chilies if needed.
  5. Serve immediately while fresh, garnished with extra herbs or lime wedges.
