Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease an 8x8-inch baking dish.
  2. In a large mixing bowl, combine the cooked sushi rice with rice vinegar, sugar, and salt. Press the mixture into the bottom of the baking dish.
  3. Flake the cooked salmon into a bowl and mix with mayonnaise, Sriracha, soy sauce, and sesame oil until combined.
  4. Spread the salmon mixture over the rice layer and top with shredded mozzarella cheese.
  5. Bake for 18-20 minutes until the cheese is melted and golden brown.
  6. Allow to cool for 5 minutes, then garnish with green onions and sesame seeds, and serve with nori.
