Divide the mixture into four equal portions and shape each portion into a patty.
Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken patties and cook for about 5-6 minutes on each side, or until the internal temperature reaches 165°F and the patties are golden brown.
During the last minute of cooking, place a slice of pepper jack cheese on each patty and cover the skillet to melt the cheese.
Toast the hamburger buns in the same skillet or in a toaster until golden brown.
Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chicken patty with melted cheese, tomato slices, and avocado if desired. Top with sour cream or ranch dressing, then place the top half of the bun on each burger.
