Ingredients
  

  • 1 pound ground chicken
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 hamburger buns
  • 4 slices pepper jack cheese
  • 1 cup shredded lettuce
  • 1 medium tomato sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro

Method
 

  1. In a large bowl, combine the ground chicken, chipotle chili powder, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.
  2. Divide the mixture into four equal portions and shape them into patties.
  3. Heat olive oil in a large skillet over medium heat. Add the chicken patties and cook for about 5-6 minutes on each side, or until they are cooked through and have an internal temperature of 165°F.
  4. During the last minute of cooking, place a slice of pepper jack cheese on each patty and cover the skillet to melt the cheese.
  5. While the patties are cooking, mix the mayonnaise, lime juice, and chopped cilantro in a small bowl to create a zesty sauce.
  6. Toast the hamburger buns in a toaster or on a skillet until golden brown.
  7. Assemble the burgers by spreading the cilantro mayo on the bottom bun, adding the crispy chicken patty, followed by shredded lettuce and tomato slices. Top with the other half of the bun.
