Step-by-Step Instructions
  1. In a medium mixing bowl, combine warm water, active dry yeast, and granulated sugar. Stir gently and let sit for 5 minutes until frothy.
  2. In a large mixing bowl, whisk together all-purpose flour and salt. Pour in the yeast mixture and stir until a shaggy dough forms.
  3. Dust a clean surface with flour and knead the dough for about 5 to 7 minutes until smooth and elastic.
  4. Grease a large bowl and place the kneaded dough inside. Cover and let it rise in a warm area for approximately 1 hour.
  5. Preheat your oven to 450°F (230°C) and line baking sheets with parchment paper.
  6. In a large pot, bring 10 cups of water to a boil and then carefully add in baking soda.
  7. Once the dough has risen, punch it down and divide into 8 equal pieces. Roll each into a rope and wrap around cheese-filled hot dogs.
  8. Boil each wrapped pretzel dog in the baking soda water for about 30 seconds on each side.
  9. Brush each pretzel dog with the beaten egg and sprinkle with coarse salt.
  10. Bake for 12 to 15 minutes until golden brown.
  11. Allow to cool slightly before serving.
