- In a medium mixing bowl, combine warm water, active dry yeast, and granulated sugar. Stir gently and let sit for 5 minutes until frothy.
- In a large mixing bowl, whisk together all-purpose flour and salt. Pour in the yeast mixture and stir until a shaggy dough forms.
- Dust a clean surface with flour and knead the dough for about 5 to 7 minutes until smooth and elastic.
- Grease a large bowl and place the kneaded dough inside. Cover and let it rise in a warm area for approximately 1 hour.
- Preheat your oven to 450°F (230°C) and line baking sheets with parchment paper.
- In a large pot, bring 10 cups of water to a boil and then carefully add in baking soda.
- Once the dough has risen, punch it down and divide into 8 equal pieces. Roll each into a rope and wrap around cheese-filled hot dogs.
