Place the carrot chunks in a large pot and cover them with water. Bring to a boil over high heat.
Once boiling, reduce the heat to medium and simmer for about 15-20 minutes, or until the carrots are fork-tender.
Drain the carrots and return them to the pot.
Add the butter, honey, salt, black pepper, and garlic powder to the pot with the drained carrots.
Using a potato masher or fork, smash the carrots to your desired consistency, leaving some chunks for texture.
Taste and adjust seasoning if necessary.
Transfer the smashed carrots to a serving dish and sprinkle with chopped parsley for garnish.
