Ingredients
  

  • 2 pounds of carrots peeled and cut into chunks
  • 4 tablespoons of unsalted butter
  • 2 tablespoons of honey
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of garlic powder
  • 2 tablespoons of fresh parsley chopped (for garnish)

Method
 

  1. Place the carrot chunks in a large pot and cover them with water. Bring to a boil over high heat.
  2. Once boiling, reduce the heat to medium and simmer for about 15-20 minutes, or until the carrots are fork-tender.
  3. Drain the carrots and return them to the pot.
  4. Add the butter, honey, salt, black pepper, and garlic powder to the pot with the drained carrots.
  5. Using a potato masher or fork, smash the carrots to your desired consistency, leaving some chunks for texture.
  6. Taste and adjust seasoning if necessary.
  7. Transfer the smashed carrots to a serving dish and sprinkle with chopped parsley for garnish.
