  • 1/2 tsp Chili Powder Use chipotle or cayenne for more heat.
  • 1/2 tsp Smoked Paprika Adds a smoky flavor.
  • 1/2 tsp Onion Powder

Step-by-Step Instructions
  1. Layer the chicken at the bottom of your slow cooker in a single, even layer.
  2. Add the corn, cream cheese, cotija cheese, lime juice, minced garlic, and chili powder on top without stirring.
  3. Cover and set the slow cooker on LOW for 4 to 5 hours or HIGH for 2 to 3 hours.
  4. Shred the chicken in the pot with two forks once cooked.
  5. If desired, adjust the sauce consistency with chicken broth or milk and taste for flavor.
  6. Garnish with fresh cilantro and serve warm.
