Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 cup creamy peanut butter
  • 1 cup coconut milk
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon red pepper flakes optional
  • 1/4 cup chopped green onions for garnish
  • 1/4 cup chopped peanuts for garnish
  • Cooked rice or quinoa for serving

Method
 

  1. Place the chicken thighs in the slow cooker.
  2. In a medium bowl, whisk together the peanut butter, coconut milk, soy sauce, honey, garlic, ginger, and red pepper flakes until smooth.
  3. Pour the peanut sauce over the chicken in the slow cooker, ensuring the chicken is well coated.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
  5. Once cooked, shred the chicken using two forks and stir it back into the sauce.
  6. Serve the peanut chicken over cooked rice or quinoa, and garnish with chopped green onions and peanuts.
