Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 2 medium zucchinis sliced into half-moons
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 1 tablespoon sesame seeds optional, for garnish
  • Chopped green onions optional, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  2. In a large bowl, whisk together the honey, soy sauce, olive oil, minced garlic, red pepper flakes, salt, black pepper, and thyme.
  3. Add the chicken thighs to the bowl and toss to coat them evenly in the marinade. Let them marinate for at least 15 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. Place the marinated chicken thighs on one side of the prepared sheet pan. Arrange the sliced zucchini on the other side of the pan. Drizzle any remaining marinade over the zucchini.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the zucchini is tender.
  6. If desired, broil for an additional 2-3 minutes to get a nice caramelization on the chicken.
  7. Remove from the oven and let rest for a few minutes. Garnish with sesame seeds and chopped green onions before serving.
