Ingredients
  

  • 8 ounces dried noodles such as spaghetti or lo mein
  • 1/4 cup vegetable oil
  • 1/4 cup scallions finely chopped (green parts only)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: red pepper flakes for heat

Method
 

  1. Cook the noodles according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a small saucepan, heat the vegetable oil over medium heat. Add the chopped scallions and sauté for about 2-3 minutes until fragrant and slightly crispy. Be careful not to burn them.
  3. In a large mixing bowl, combine the cooked noodles, soy sauce, sesame oil, sugar, salt, and black pepper. Add the scallion oil (including the scallions) and toss everything together until well coated. If the noodles seem dry, add a splash of reserved pasta water to loosen them up.
  4. Taste and adjust seasoning if necessary. If you like a bit of heat, sprinkle in some red pepper flakes.
  5. Serve immediately, garnished with extra scallions if desired.
