Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Remove the stems from the baby Bella mushrooms and chop them finely.
  3. Melt a tablespoon of butter in a skillet over medium-high heat, then add the chopped mushroom stems and sauté for 5-7 minutes.
  4. Stir in minced garlic and panko breadcrumbs, cooking for another 2-3 minutes until golden.
  5. Transfer the mixture to a mixing bowl, let cool slightly, then blend in softened cream cheese, jalapeño, scallions, salt, and pepper.
  6. Stuff each mushroom cap with the filling and place them on the baking sheet.
  7. Sprinkle Parmesan cheese over each stuffed mushroom.
  8. Bake for 20-25 minutes until mushrooms are tender and tops are golden brown.
  9. Let cool for a few minutes, then garnish with extra scallions before serving.
