Ingredients
  

  • 2 cups cooked white rice
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning 1 ounce
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes fresh or canned
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced green onions
  • 1 avocado diced
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef or turkey, season with salt and pepper, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  2. Stir in the taco seasoning and 1/4 cup of water. Cook for an additional 5 minutes, allowing the flavors to meld.
  3. While the meat is cooking, prepare the rice according to package instructions if not already cooked.
  4. In a separate pot, heat the black beans and corn over low heat until warmed through, about 5 minutes.
  5. To assemble the taco rice bowl, start with a base of cooked rice in each bowl.
  6. Top the rice with the seasoned meat, followed by black beans, corn, diced tomatoes, shredded lettuce, and shredded cheddar cheese.
  7. Finish with a dollop of sour cream, diced avocado, and a sprinkle of sliced green onions.
  8. Serve immediately and enjoy your savory taco rice bowl!
