For the Sweet Potatoes
  • 2 large Sweet Potatoes Use large, wide ones for even slicing.
  • 1 spray Olive Oil Spray Substitute with avocado oil spray if preferred.
  • 1 teaspoon Sea Salt Enhances the natural flavor.
For the Topping
  • 1 cup Cranberry Sauce Homemade or store-bought.
  • 8 ounces Brie Cheese Regular or dairy-free alternatives.
  • 1 cup Pecans Alternatively, use walnuts or toasted almonds.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Slice sweet potatoes into ¼-inch thick discs.
  2. Line a baking sheet with parchment paper. Arrange sweet potato rounds in a single layer, mist with olive oil spray and sprinkle with sea salt.
  3. Bake for 15 minutes, flip each disc, and bake for another 15 minutes until golden and tender.
  4. Remove from oven and top each round with cranberry sauce followed by a slice of brie.
  5. Return to oven and bake for an additional 10 minutes to melt the brie.
  6. Press a pecan into each slice of brie and bake for an additional 5 minutes until pecans are toasted.
  7. Let cool briefly before serving and enjoy.
