Preparation
- Preheat the oven to 375°F (190°C). Slice sweet potatoes into ¼-inch thick discs.
- Line a baking sheet with parchment paper. Arrange sweet potato rounds in a single layer, mist with olive oil spray and sprinkle with sea salt.
- Bake for 15 minutes, flip each disc, and bake for another 15 minutes until golden and tender.
- Remove from oven and top each round with cranberry sauce followed by a slice of brie.
- Return to oven and bake for an additional 10 minutes to melt the brie.
- Press a pecan into each slice of brie and bake for an additional 5 minutes until pecans are toasted.
- Let cool briefly before serving and enjoy.
