Step-by-Step Instructions
  1. Cook the rice according to the package instructions, usually about 15-20 minutes, and keep warm.
  2. Season chicken breasts with salt, pepper, chili powder, and cumin. Heat olive oil in a skillet and cook chicken for 6-8 minutes each side until golden brown.
  3. In the same skillet, add corn and red onion, sauté for 4-5 minutes until lightly charred. Add minced garlic and cook for another 1-2 minutes.
  4. Combine the cooked rice with the corn mixture in a bowl, add lime juice, and mix well.
  5. Assemble bowls by dividing the rice and corn mixture, topping with sliced chicken, avocado, and cheese. Garnish with cilantro.
  6. Serve warm with extra lime wedges on the side.
