- Bring a pot of salted water to a boil. Blanch the spinach for 30 seconds, then cool in ice water.
- In a bowl, combine drained spinach, artichokes, cream cheese, goat cheese, Parmesan, mozzarella, garlic, salt, and pepper. Mix until creamy.
- Preheat the oven to 375°F (190°C). Transfer mixture to a greased baking dish and spread evenly.
- Bake for 25 minutes until edges are bubbling. Top with more mozzarella and bake for an additional 5 minutes.
