  • 14 oz Artichoke Hearts Canned, drained and chopped
  • 8 oz Cream Cheese Softened
  • 4 oz Goat Cheese Softened
  • 1/2 cup Parmesan Cheese Grated
  • 1 cup Mozzarella Cheese Shredded, more for topping
  • 2 cloves Garlic Minced
  • 1 tsp Salt
  • 1 tsp Pepper

Method
 

Step-by-Step Instructions
  1. Bring a pot of salted water to a boil. Blanch the spinach for 30 seconds, then cool in ice water.
  2. In a bowl, combine drained spinach, artichokes, cream cheese, goat cheese, Parmesan, mozzarella, garlic, salt, and pepper. Mix until creamy.
  3. Preheat the oven to 375°F (190°C). Transfer mixture to a greased baking dish and spread evenly.
  4. Bake for 25 minutes until edges are bubbling. Top with more mozzarella and bake for an additional 5 minutes.
  5. Allow to cool slightly and serve warm with crackers, veggies, or bread.
