- Pat the chicken thighs dry with paper towels. Mix the seasoning ingredients and rub onto the chicken. Let it sit for 15 minutes.
- Prepare the flour mixture by mixing all-purpose flour with a pinch of salt and pepper in a shallow dish.
- Dredge the seasoned chicken in the flour mixture, shaking off excess.
- Heat the oil in a skillet over medium-high. Sear chicken thighs skin-side down for 5-7 minutes until golden. Flip and sear for 5 minutes. Remove and set aside.
- In the same skillet, lower heat to medium and melt butter. Sauté chopped onion for 3-4 minutes, then add minced garlic and red pepper flakes for 1 minute. Stir in flour from pan drippings.
- Gradually whisk in chicken stock, cooking until thickened (5-7 minutes). Stir in heavy cream until smooth.
- Combine the chicken thighs back in the gravy, cover and transfer to a preheated oven at 400°F for 45 minutes.
- After baking, let the skillet sit for a few minutes. Spoon gravy over chicken thighs and serve over mashed potatoes.
