- Pat the beef chuck roast dry with paper towels, rub with olive oil and season with salt, black pepper, garlic powder, and onion powder.
- Heat a large skillet over medium-high heat, add olive oil, sear the roast for 3-4 minutes on each side until golden-brown.
- Transfer the roast to the Crockpot, mix beef broth, Worcestershire sauce, and soy sauce, pour over the roast.
- Set the Crockpot to low and cook for 8 hours until fork-tender.
- Remove roast from the Crockpot, shred with two forks and return to juices.
- Slice hoagie rolls lengthwise, add cheese if desired, broil for 1-2 minutes until melty.
- Assemble sandwiches with shredded beef, drizzle cooking liquid, and serve with au jus.
