Ingredients

For the Kofta
  • 1 pound Ground Chicken Use chicken breast or thighs for enhanced juiciness.
  • 1 medium Onion Adds moisture and sweetness; shallots can be substituted for a milder taste.
  • 2 cloves Garlic Provides robust flavor; roasted garlic can be used for a sweeter kick.
  • 1/4 cup Fresh Parsley Offers freshness and color; cilantro is a great swap.
  • 1 teaspoon Ground Cumin Introduces warm, earthy tones; ground coriander can serve as a lighter alternative.
  • 1 teaspoon Ground Coriander Enhances aroma; can be omitted or adjusted with other spices.
  • 1 teaspoon Salt Essential for seasoning; low-sodium variant can be used.
  • 1/2 teaspoon Ground Black Pepper Adds gentle heat; white pepper is an alternative.
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Greek yogurt offers a thicker texture.
  • 2 tablespoons Lemon Juice Brightens flavor; lime juice can be used.
  • 1 tablespoon Olive Oil Prevents sticking on the grill; avocado oil is a suitable substitute.

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until well blended.
  2. Shape the mixture into small oval patties, about the size of an egg, ensuring they’re tightly packed.
  3. Preheat your grill to medium-high heat, approximately 400°F (200°C), and lightly brush the grill grates with olive oil.
  4. Place the koftas on the preheated grill. Grill for about 10-12 minutes, turning occasionally until they are golden brown and cooked through.
  5. In a medium bowl, combine plain yogurt, lemon juice, and a pinch of salt. Whisk together until smooth and creamy.
  6. Once koftas are cooked, remove from grill and let rest for a few minutes. Serve with garlic yogurt sauce and warm pita bread or salad.
