Step-by-Step Instructions
  1. Prepare the Chicken: Rinse and dry the chicken thighs. Season with salt and black pepper and let rest for about 15 minutes.
  2. Preheat and Cook Bacon: Preheat oven to 350°F (180°C). Cook chopped bacon in skillet over medium heat until crispy, about 6-8 minutes, then remove and set aside.
  3. Brown the Chicken: In the same skillet, add butter to the drippings. Cook seasoned chicken thighs skin-side down for 8-10 minutes until golden brown, then flip and cook for another 6-7 minutes.
  4. Sauté Shallots and Garlic: Add shallots and garlic to the skillet and sauté until shallots are translucent, about 5-6 minutes.
  5. Combine Ingredients: Return chicken thighs to the skillet, pour in white wine, add crispy bacon and sprigs of thyme.
  6. Bake the Chicken Fricassée: Transfer skillet to preheated oven and bake uncovered for 30 minutes.
  7. Serve and Enjoy: Remove skillet from oven, let rest, then serve chicken with shallots, bacon, and sauce over mashed potatoes or bread.
