Step-by-Step Instructions
- In a medium bowl, mix together peeled and deveined shrimp with olive oil and Cajun seasoning. Allow to marinate for at least 10 minutes.
- In a large pot, boil salted water and cook fettuccini according to package instructions, about 8-10 minutes. Drain and keep warm.
- Heat a large frying pan over medium heat, add butter, and sauté mushrooms and shallots for 4-5 minutes until golden brown.
- Increase heat to medium-high and add marinated shrimp. Cook for 2-3 minutes until pink and opaque, then set aside.
- Pour chicken broth into the same pan, bring to a boil, deglaze, and reduce for 2-3 minutes. Mix sour cream and cornstarch, add it to the pan, and cook for 1 minute until bubbly and thick.
- Return shrimp, sautéed vegetables, roasted red peppers, and capers to the sauce. Stir and heat through for 2 minutes, adjusting seasonings with salt and pepper.
- Serve on warm plates with fettuccini underneath and top with the creamy Blackened Shrimp Stroganoff.

Notes
For best results, ensure shrimp are thawed and dry before marinating. Adjust seasoning to preference.
