Method
 

Step-by-Step Instructions
  1. In a medium bowl, mix together peeled and deveined shrimp with olive oil and Cajun seasoning. Allow to marinate for at least 10 minutes.
  2. In a large pot, boil salted water and cook fettuccini according to package instructions, about 8-10 minutes. Drain and keep warm.
  3. Heat a large frying pan over medium heat, add butter, and sauté mushrooms and shallots for 4-5 minutes until golden brown.
  4. Increase heat to medium-high and add marinated shrimp. Cook for 2-3 minutes until pink and opaque, then set aside.
  5. Pour chicken broth into the same pan, bring to a boil, deglaze, and reduce for 2-3 minutes. Mix sour cream and cornstarch, add it to the pan, and cook for 1 minute until bubbly and thick.
  6. Return shrimp, sautéed vegetables, roasted red peppers, and capers to the sauce. Stir and heat through for 2 minutes, adjusting seasonings with salt and pepper.
  7. Serve on warm plates with fettuccini underneath and top with the creamy Blackened Shrimp Stroganoff.
