  • 1 cup cooked rice white, brown, or cilantro-lime rice
For the Chicken
  • 2 pieces boneless skinless chicken breasts grilled and sliced
For the Corn
  • 2 cups corn kernels fresh, frozen, or canned

  • 0.5 cups black beans rinsed and drained
  • 1 medium red onion finely chopped
  • 1 cup diced tomatoes fresh or cherry tomatoes
For the Garnish
  • 0.25 cups cotija cheese crumbled
  • 0.25 cups cilantro fresh, chopped
For the Seasonings
  • 1 tablespoon olive oil or neutral oil
  • 1 teaspoon chili powder adjust to taste
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon cumin optional
  • to taste salt
  • to taste black pepper
For the Lime Crema
  • 0.5 cups sour cream or Greek yogurt for creaminess
  • 1 tablespoon lime juice freshly squeezed
  • 0.25 teaspoon garlic powder

Method
 

Cooking Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the corn kernels and sauté for about 3-4 minutes until charred.
  2. Stir in chili powder, smoked paprika, salt, and black pepper. Set aside.
  3. In a small bowl, mix sour cream or Greek yogurt, lime juice, and garlic powder until smooth. Set aside.
  4. Grill the seasoned chicken breasts for 6-7 minutes on each side until cooked through. Let rest and slice.
  5. In each serving bowl, layer cooked rice, sliced chicken, sautéed corn, black beans, diced tomatoes, and red onion.
  6. Top with cotija cheese, drizzle with lime crema, and garnish with cilantro.
  7. Serve immediately and enjoy!
