For the Skillet
  • 2 tablespoons avocado oil substitute with canola or olive oil if needed
  • 1 pound lean ground beef aim for 90/10 or leaner
  • 2 cups diced Yukon Gold potatoes red potatoes can be used if preferred
  • 1 medium diced yellow onion any onion variety can be used
  • 1 medium diced red bell pepper other colored bell peppers can be used
  • to taste kosher salt
  • to taste black pepper
  • 1 can diced green chiles choose mild or hot based on heat tolerance
  • 1 tablespoon chili powder star seasoning for warm, smoky flavor
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika substitute with regular paprika if needed
  • to taste cilantro omit if not preferred
  • 1-2 cups shredded cheese (Cheddar, Colby Jack) any cheese of choice works

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat until shimmering.
  2. Add diced Yukon Gold potatoes and sauté for 5-6 minutes until golden brown and tender.
  3. Push potatoes to one side, crumble in 1 pound of lean ground beef, and add 1 diced yellow onion and 1 diced red bell pepper to empty side. Season with kosher salt and black pepper. Cook for 6-8 minutes until beef is browned and vegetables are tender.
  4. Add 1 can of diced green chiles, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and 1 teaspoon of smoked paprika. Mix well for 2-3 minutes.
  5. Make sure potatoes are tender and beef is cooked; sprinkle 1-2 cups of shredded cheese on top and cover. Cook for an additional 2-3 minutes until cheese is melted.
  6. Remove from heat and sprinkle freshly chopped cilantro on top. Serve directly from the skillet.
