- Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat until shimmering.
- Add diced Yukon Gold potatoes and sauté for 5-6 minutes until golden brown and tender.
- Push potatoes to one side, crumble in 1 pound of lean ground beef, and add 1 diced yellow onion and 1 diced red bell pepper to empty side. Season with kosher salt and black pepper. Cook for 6-8 minutes until beef is browned and vegetables are tender.
- Add 1 can of diced green chiles, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and 1 teaspoon of smoked paprika. Mix well for 2-3 minutes.
- Make sure potatoes are tender and beef is cooked; sprinkle 1-2 cups of shredded cheese on top and cover. Cook for an additional 2-3 minutes until cheese is melted.
- Remove from heat and sprinkle freshly chopped cilantro on top. Serve directly from the skillet.
