  • 2 medium Zucchini sliced into half-moons
  • 8 ounces Mushrooms any type, cleaned and sliced
  • 1 medium Onion peeled and sliced
For Cooking
  • 2 tablespoons Olive Oil or butter/ghee
  • 2 cloves Garlic minced or smashed
  • to taste Salt
  • to taste Pepper
For Extra Flavor
  • 1 teaspoon Dried Thyme optional
  • 2 tablespoons Fresh Parsley for garnish

Preparation Steps
  1. Wash and slice zucchini into half-moons. Clean and slice mushrooms if necessary. Peel and slice the onion, then mince the garlic.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 1 minute until shimmering.
  3. Add sliced onions to the skillet and sauté for approximately 3 minutes until translucent and fragrant.
  4. Incorporate minced garlic and sliced mushrooms, cooking for 3-4 minutes until mushrooms are tender.
  5. Add zucchini slices, season with salt, pepper, and dried thyme. Sauté for another 3-5 minutes until zucchini is tender.
  6. Taste and adjust seasonings as necessary. Remove from heat and garnish with fresh parsley before serving.
