Dough Preparation
- In a bowl, combine warm water with sugar and active dry yeast; let it sit for about 5 minutes until foamy.
- Stir in olive oil, then gradually add all-purpose flour and salt until a shaggy dough forms.
- Turn the dough out onto a floured surface, and knead for 8-10 minutes until smooth and elastic.
- Shape the dough into a ball and place in a greased bowl, covering with a kitchen towel. Let it rise for 1 to 1.5 hours.
Cooking the Sausage
- While the dough rises, heat a skillet over medium heat. Add Italian sausage and cook until browned, about 5-7 minutes.
- Drain excess grease, then add chopped red onion and sauté until softened, roughly 3 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
Assembling and Baking
- Preheat the oven to 450°F (232°C). If using a pizza stone, place it in the oven to heat up.
- Roll the risen dough into a 12-inch circle. Transfer to a prepared baking sheet or pizza stone.
- Brush the rolled-out dough with olive oil. Distribute the sausage-onion mixture evenly, then sprinkle crumbled feta on top.
- Bake for 12-15 minutes until the crust is golden and cheese is bubbling.
- Drizzle with honey, sprinkle fresh basil leaves and optional red pepper flakes, then cool slightly before slicing.
