Step‑by‑Step Instructions
  1. Brown the Ground Beef. In a large pot or Dutch oven, heat over medium heat, add the ground beef, and cook until browned, about 5–7 minutes. Drain any excess grease.
  2. Sauté the Aromatics. Add the diced onion and sauté for 3–4 minutes until translucent. Stir in garlic, salt, and black pepper, cooking until garlic is fragrant, about 30 seconds.
  3. Mix in the Spices and Liquids. Sprinkle in taco and ranch seasoning, stirring to coat. Pour in beef broth, add Rotel, beans, and corn, mixing thoroughly.
  4. Let it Simmer. Cover and reduce heat to medium-low, simmer for about 30 minutes, stirring occasionally.
  5. Taste and Adjust. After simmering, taste and adjust seasoning. If desired, add diced jalapeños or hot sauce.
  6. Serve with Toppings. Ladle the soup into bowls and allow customization with toppings like sour cream, cheese, jalapeños, green onions, or avocado.
