- Preheat your oven to 400°F (200°C). Season the chicken thighs with salt, pepper, onion powder, garlic powder, smoked paprika, and fresh thyme.
- In a large skillet over medium-high heat, add olive oil. Sear the chicken thighs skin-side down for 5-7 minutes until crispy, then flip and sear the other side for 5 minutes.
- Remove chicken and add red onion and Honeycrisp apples to the skillet. Sauté for 2-3 minutes until apples soften and onions caramelize.
- Reduce heat to medium, add butter to the skillet. Once melted, stir in garlic, then pour in apple cider and broth or wine. Add Dijon mustard, bring to a simmer for 5 minutes.
- Return chicken to the skillet, spoon sauce over it, and roast in the oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
- For a thicker sauce, after cooking, remove chicken and whisk cornstarch with water, stir into sauce and simmer until desired thickness.
