Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Season the chicken thighs with salt, pepper, onion powder, garlic powder, smoked paprika, and fresh thyme.
  2. In a large skillet over medium-high heat, add olive oil. Sear the chicken thighs skin-side down for 5-7 minutes until crispy, then flip and sear the other side for 5 minutes.
  3. Remove chicken and add red onion and Honeycrisp apples to the skillet. Sauté for 2-3 minutes until apples soften and onions caramelize.
  4. Reduce heat to medium, add butter to the skillet. Once melted, stir in garlic, then pour in apple cider and broth or wine. Add Dijon mustard, bring to a simmer for 5 minutes.
  5. Return chicken to the skillet, spoon sauce over it, and roast in the oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
  6. For a thicker sauce, after cooking, remove chicken and whisk cornstarch with water, stir into sauce and simmer until desired thickness.
