- Preheat your oven to 400°F (200°C).
- Rinse and scrub the beets and carrots under cool water. Roast the beets whole or cut into chunks. Peel and cut the carrots.
- Spread beets and carrots on the baking sheet and roast for 25–35 minutes until tender.
- Prepare a large serving platter with a bed of fresh greens.
- Layer the warm beets and carrots on top of the greens and place the burrata in the center.
- Sprinkle nuts over the salad and drizzle with dressing just before serving.
