  • 1/4 cup Red Onion Sliced, adjust to taste.
  • 1/3 cup Kalamata Olives
  • 1 cup Mozzarella Balls Can use feta as an alternative.
  • 1/4 cup Fresh Parsley Chopped.
For the Dressing
  • 1/2 cup Olive Oil Can substitute with avocado oil.
  • 1/4 cup Italian Seasoning
  • 1/4 cup Italian Dressing Combine olive oil, red wine vinegar, and Parmesan.

  • 1 tsp Garlic Powder
  • 1/4 tsp Crushed Red Pepper Flakes Optional for extra spice.

Step-by-Step Instructions
  1. Prepare Chicken: Preheat grill to medium-high heat. Season chicken with olive oil, Italian seasoning, salt, and pepper. Grill for 5-6 minutes on each side until cooked through. Let rest and chop.
  2. Cook Pasta: Bring salted water to boil in a large pot. Add rotini and cook for 7-9 minutes until al dente. Drain and rinse under cold water.
  3. Make Dressing: Combine olive oil, red wine vinegar, Parmesan, and herbs in a bowl or jar. Whisk or shake until blended. Refrigerate until ready to use.
  4. Assemble Salad: In a large bowl, combine pasta, chicken, cucumber, cherry tomatoes, red onion, olives, mozzarella, and parsley. Drizzle with dressing and toss gently.
  5. Adjust Seasoning and Serve: Taste and adjust seasoning with salt, pepper, or additional dressing. Serve immediately or cover and refrigerate for flavors to meld.
