Method
 

Preparation Steps
  1. In a medium bowl, beat cream cheese and butter until smooth, then add powdered sugar and milk until pourable.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, eggs, melted butter, vanilla extract, vinegar, and food coloring until combined.
  4. Fold wet ingredients into dry mixture, mix until just combined and slightly lumpy. Let the batter rest for 5 minutes.
  5. Preheat the griddle to medium heat and lightly grease.
  6. Pour 1/4 cup batter onto the griddle, cook until bubbles form, then flip and cook until golden brown.
  7. Keep pancakes warm in a covered dish while cooking the remaining batter.
  8. Serve pancakes stacked with cream cheese glaze and optional toppings.
