Ingredients

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 cup ranch dressing
  • 4 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • Wooden or metal skewers if using wooden skewers, soak in water for 30 minutes

Method

  1. In a large bowl, combine the ranch dressing, minced garlic, Parmesan cheese, black pepper, paprika, dried parsley, and salt. Mix well to create a marinade.
  2. Add the cubed chicken to the marinade, ensuring all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat your grill to medium-high heat. If using an oven, preheat to 400°F.
  4. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F. If baking, place skewers on a baking sheet and bake for 20-25 minutes, flipping halfway through.
  6. Remove from the grill or oven and let rest for a few minutes before serving.
