Ingredients
  

  • 8 ounces fresh or dried Shanghai noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 small onion thinly sliced
  • 1 cup shredded carrots
  • 1 cup bell pepper thinly sliced
  • 1 cup bean sprouts
  • 2 green onions chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Method
 

  1. Cook the Shanghai noodles according to package instructions. Drain and set aside. If using dried noodles, rinse them under cold water to prevent sticking.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sliced onion, sautéing for about 2 minutes until fragrant.
  3. Add the shredded carrots and bell pepper to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  4. Add the cooked noodles to the skillet along with the bean sprouts, green onions, soy sauce, oyster sauce, and sesame oil. Toss everything together until well combined and heated through, about 2-3 minutes.
  5. Season with salt and pepper to taste. Serve hot.
