Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine finely chopped pistachios, honey, rosemary, sea salt, and black pepper.
  3. Roll out your chilled puff pastry until about 1/8 inch thick and cut into 3x3-inch squares.
  4. Place about 1 ounce of Brie in the center of each square and top with 1-2 teaspoons of pistachio mixture.
  5. Fold the corners of the pastry over the filling, seal tightly, and brush the tops with egg wash.
  6. Bake for 15-20 minutes until golden brown.
  7. Allow to cool slightly before serving and garnish as desired.
