Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry until about ¼ inch thick and cut into 24 squares.
  3. Place the pastry squares on the mini muffin tin or the baking sheet, spaced apart.
  4. Cut the brie cheese into ¾-inch cubes and place a cube in the center of each pastry square.
  5. Top each brie-filled pastry with chopped pistachios, drizzle honey, and sprinkle with rosemary, sea salt, and black pepper.
  6. Brush the edges of the pastry squares with beaten egg for a golden finish.
  7. Bake for 13 to 16 minutes until puffed and golden brown.
