Method
 

  1. In a medium bowl, whisk together the almond milk, chia seeds, mashed banana, peanut butter, honey or maple syrup, vanilla extract, and salt until well combined.
  2. Let the mixture sit for about 5 minutes, then whisk again to prevent the chia seeds from clumping together.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight to allow the pudding to thicken.
  4. Once thickened, stir the pudding again before serving.
  5. Serve chilled, topped with banana slices, a drizzle of peanut butter, and a sprinkle of chia seeds if desired.
