In a medium bowl, whisk together the almond milk, chia seeds, mashed banana, peanut butter, honey or maple syrup, vanilla extract, and salt until well combined.
Let the mixture sit for about 5 minutes, then whisk again to prevent the chia seeds from clumping together.
Cover the bowl and refrigerate for at least 2 hours or overnight to allow the pudding to thicken.
Once thickened, stir the pudding again before serving.
Serve chilled, topped with banana slices, a drizzle of peanut butter, and a sprinkle of chia seeds if desired.
