Ingredients
  

  • 2 cups strawberries hulled and sliced
  • 2 tablespoons honey or maple syrup
  • 1 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 cups blueberries
  • 2 tablespoons lemon juice
  • 1 cup coconut water or lemonade

Method
 

  1. In a blender, combine the strawberries and honey or maple syrup. Blend until smooth.
  2. Pour the strawberry mixture into popsicle molds, filling them about one-third full. Place the molds in the freezer for about 1 hour, or until the strawberry layer is firm.
  3. In a bowl, mix the Greek yogurt and vanilla extract until well combined.
  4. Remove the molds from the freezer and carefully spoon the yogurt mixture over the frozen strawberry layer, filling the molds another third of the way. Return the molds to the freezer for another hour.
  5. In the blender, combine the blueberries and lemon juice. Blend until smooth.
  6. Remove the molds from the freezer one last time and pour the blueberry mixture on top of the yogurt layer, filling the molds to the top.
  7. Insert popsicle sticks and freeze for at least 4 hours, or until completely solid.
  8. To release the Patriotic Popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy!

Notes

  • For a creamier texture, substitute the Greek yogurt with coconut yogurt.
